Crafted by Ramiro Ibáñez in Sanlúcar de Barrameda, this white wine is sourced from the historic Miraflores Alta vineyard parcel. The palomino vines are rooted in pure, chalky albariza limestone soils that naturally restrict vine vigor and retain high mineral components. The juice ferments spontaneously with native vineyard yeasts in old Manzanilla sherry butts, avoiding synthetic temperature controls. It ages under a natural film of flor yeast for several months to encourage texture without fortification.

It pours a pale straw-yellow color, releasing reductive aromas of citrus rind, toasted almond, and dried chamomile. The palate is medium-bodied and deeply physical, showcasing a waxy mouthfeel balanced by a sharp beam of mineral acidity. Savory flavors of green apple and grapefruit pith wrap around a highly textured mid-palate structure. A strong vein of maritime salinity cuts right through the wine, keeping it fresh. It finishes bone-dry and persistent, leaving a mouthwatering mineral trace.

Bodegas Cota 45 is a small, traditional winery founded in 2012 by winemaker Ramiro Ibáñez in Sanlúcar de Barrameda, within Spain's famous "Sherry Triangle". The winery is dedicated to reviving and preserving the traditional, terroir-driven winemaking of the region, focusing particularly on unfortified Palomino wines. The name "Cota 45" refers to the 45 meters above sea level where Ibáñez believes the best albariza soils are found.
