Chavost Assemblage Brut Nature NV:
This non-vintage blend, often showcasing a balance of Chardonnay and Meunier, opens with a lively, energetic mousse, giving way to crisp aromas of green apple and pear, often accompanied by subtle hints of white peach and mineral notes reminiscent of crushed chalk. On the palate, the wine reveals a precise, dry character, driven by vibrant acidity and a distinct minerality. The absence of dosage (Brut Nature) allows the inherent quality of the fruit and terroir to shine, delivering a clean, refreshing finish. Notes of almond and a slight creaminess can also be present, adding complexity to the overall experience. This Champagne is a testament to minimal intervention winemaking, highlighting the natural beauty of its Champagne origins.
Dominique Belluard Eponyme 2020:
Captivating white wine that beautifully expresses the unique terroir of Savoie and the singular Gringet grape. On the nose, it offers a delicate yet complex bouquet of subtle floral notes, hints of white orchard fruits like pear and quince, and a distinctive underlying minerality that speaks of its alpine origins. The palate is lively and refreshing, with a vibrant acidity that cuts through its elegant texture. From Baden, Germany, comes this elegant and refined Spatburgunder, Pinot Noir. 100% whole cluster fermented, with some carbonic maceration, offering pure bright fruit aromas on the nose with subtle herbal notes. On the palate, an explosion of red fruits, bubble gum, and a hint of herbal notes. Chill it a bit, and drink it all day.
