This white Burgundy wine is a premier cru Chardonnay sourced from the Les Frionnes parcel in the Saint-Aubin appellation. Winemaker Joseph Colin practices low-intervention organic viticulture on local clay-limestone soils to protect the natural structural acidity of the site. The hand-harvested grapes undergo a gentle whole-bunch press followed by a spontaneous fermentation driven entirely by native wild yeasts. The liquid matures on its fine fermentation lees in neutral French oak barrels without modern chemical adjustments.
It displays a bright straw-yellow color, releasing refined aromatics of green apple, lemon flesh, and white flowers over crushed rock. On the palate, a sleek, medium-bodied frame balances orchard fruit flavors with an underlying chiseled mineral core. A lively wave of natural acidity cuts through the slightly waxy texture, keeping the mouthfeel lively. Subtle notes of fresh pastry and lemon oil add depth across the clean framework. It finishes long, dry, and persistently clean.
Joseph Colin comes from one of the great white-wine families of Saint-Aubin, but his domaine has quickly established its own clear voice. After working at Domaine Marc Colin, Joseph created his own estate from family parcels in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Santenay. The approach is precise and classical: careful farming, restrained use of oak, native fermentations and an emphasis on capturing the tension of limestone-rich sites. His wines show why Saint-Aubin has moved from insider secret to essential Burgundy address, combining citrus, stone, salinity and enough flesh to feel complete without ever becoming heavy.
