This single-vineyard gastromonic rosé is crafted from the rare native tibouren grape, sourced from the oldest vines at the estate. The organic plots are situated on coastal schists in Provence, where sea winds help preserve a sharp structural freshness. Vinification relies on native vineyard yeasts, followed by a lengthy maturation period under a natural veil of fleurette yeast inside neutral wooden casks. This disciplined process encourages texturally driven development while keeping modern commercial fruit flavors completely out of the equation.

It displays a distinctive copper hue, opening with a complex nose of wild strawberry, red currant, and singed orange peel. A structured, full body pairs savory red berry flavors with a unique, texturally gripping mouthfeel. Notes of dried Mediterranean herbs blend into the fruit core across mid-palate volume. A racy vein of coastal acidity cuts through the texture, keeping the fluid frame balanced. It concludes with a long, iodine-tinged finish.

Unlike many modern Provençal producers, Clos Cibonne is renowned for crafting complex, age-worthy rosé wines from the rare, indigenous Tibouren grape. In the 1930s, winemaker André Roux committed to the difficult but expressive Tibouren grape, which now forms the basis for their flagship rosé. The thin-skinned, ancient grape is particularly well-suited to the winery's coastal microclimate. The estate's dedication to quality was recognized in 1955 when it was classified as one of the 18 Cru Classé estates in Provence. Fifth-generation winemaker Olivier Deforges is now leading the winery toward organic viticulture to ensure the health and expression of their unique terroir.
