The organically grown grapes are hand-harvested in small baskets in late September or Early October, depending on the year. The type of vintage will also decide whether the grapes are left to macerate a few hours on their skins or whether the grapes are directly pressed to produce a lighter rosé. After this time, the free-run juice is then fermented at cool temperatures until dry. Deep red for a rosé, the wine is remarkably fruity showing pungent berry notes in the nose along with some spice and even citrus. On the palate, the wine has a somewhat saline mineral texture balanced with the forward fruit concentration.
Azienda Agricola Cirelli is an organic farm and winery located in the Abruzzo region of Italy, known for its minimal-intervention approach to winemaking. The estate, founded in 2003 by Francesco Cirelli, cultivates a diverse, 23-hectare ecosystem that includes vineyards, olive groves, and free-range animals, which contribute to natural fertilization.
