Sourced from organic family pinot noir plots in Chervey and Neuville-sur-Seine, this Champagne highlights extended bottle aging. Winemaker Charles Dufour guides the base wine through spontaneous native yeast fermentation and complete malolactic conversion in neutral French oak barriques. Resting on fine lees for one year, it is bottled without added sulfur. After seven years of cellar maturation on its side, a low-dosage disgorgement seals an authentic grower identity.
It pours a luminous gold hue, releasing complex aromas of yellow orchard fruit, jasmine blossoms, and brothy saline notes. A full-bodied frame carries a broad, texturally rich mouthfeel that remains balanced by a racy vein of coastal acidity. Rich flavors of nectarine and yellow plum interweave with a creamy baseline of almond. Fine mineral undercurrents integrate with the oak frame, providing excellent structural focus. It finishes long, bone-dry, and persistent, leaving a mouthwatering trace.
Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
