This limited late-disgorged Champagne is crafted by Charles Dufour from his mother's organically farmed vineyards in the Vallée de l'Arce. Made from pinot noir harvested in a single vintage, the winemaking utilizes spontaneous native yeast fermentation and zero added sulfur. The base wine undergoes full malolactic conversion and ages for one year split equally between neutral barrels and stainless steel tanks. This second release rests for over a decade on its fine fermentation lees before being disgorged as a zero-dosage Extra Brut.

It displays a deep straw-gold color, releasing intense aromatics of bruised apple, roasted hazelnuts, beeswax, and dried orange peel. The palate is medium-bodied and vinous, showcasing a rich, layered texture balanced by a sharp beam of mineral acidity. Savory flavors of salted plum and toasted almond wrap around a structured, chalky mouthfeel. The extended bottle aging grants the wine a long, shelf-stable focus that feels completely balanced.

Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
