Presented in a magnum format for slow development, this natural Champagne is an organic blend of pinot noir, chardonnay, and pinot blanc. Winemaker Charles Dufour uses sixty-five percent barrel-fermented base harvest fruit, blended with solera reserves and historic family library stocks. Relying on hand-harvesting and spontaneous native yeast fermentations, the winemaking avoids synthetic cellar modifications. Bottled without added sulfites, it matures for over a year before a low-dosage disgorgement.
It radiates a pale straw color with silver highlights and a persistent stream of bubbles. The nose opens with aromas of red currant, fresh apricot, and sweet fruit compote. On the palate, the full-bodied frame is rich and velvety, balancing intense orchard fruit flavors with a sharp wave of volcanic salinity. The oak integration is seamless, providing a warming base without heavy wood flavors. It finishes long, dry, and elegant, leaving a clean mineral impression.
Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
