Young winemaker Benoit Doussot is making some impressive vinifications in the Cote des Bars region. Boreal, comes entirely from north-facing slopes, and it's 100% Pinot Noir with zero dosage, from kimmeridgian soils. Grapes are direct pressed, and racked into 600L French oak barrels for a first fermentation. After the second fermentation, the wine spends 21 months in bottle before release. Precise and intense, mineral driven with bright, crunchy berry flavors.

Champagne Clandestin is a micro-négociant house in the Aube region of Champagne, France, founded in 2015 by Benoît Doussot in collaboration with renowned vigneron Bertrand Gautherot of Vouette & Sorbée. The name "Clandestin" reflects the hidden, untapped potential of the region's terroirs and Doussot's unconventional entry into the industry. The project is a direct result of Doussot's apprenticeship with Bertrand Gautherot, adopting the same principles of organic and biodynamic farming and minimal cellar manipulation. The wines are bottled exclusively as Brut Nature, without any added sugar, to express the purity of the fruit and terroir.
