Sourced from steep, limestone and blue clay soils in the Colli Tortonesi, this late-harvested Timorasso is crafted by winemaker Natale Simonetta using an extended, non-interventionist approach. The hand-picked fruit ferments spontaneously with native yeasts before undergoing long, slow aging on its fine lees in a combination of neutral oak vessels and stainless steel. The wine undergoes extended bottle maturation before release, allowing the variety’s natural tendency toward waxy oxidation and mineral density to fully develop. Bottled with minimal sulfur, this is a powerful, dry, and uncompromising Piedmontese white built for exceptional cellar potential.

A deep amber-gold hue opens to dense aromas of dried apricot, beeswax, petrol, crushed walnut, and chamomile tea. The palate is broad and palate-coating, delivering rich flavors of preserved lemon, dried pear, honeyed almond, and wet slate framed by a firm phenolic grip. High, driving natural acidity cuts directly through the wine's oily, leesy weight, keeping the mid-palate balanced and electric. It finishes long, savory, and bone-dry, leaving a lingering trail of salty stone, dried herbs, and bitter orange peel.

Cascina Baricchi is a small, traditional, family-owned winery located in the Piedmont region of Italy, known for crafting elegant, age-worthy Barbaresco. Led by Natale Simonetta and his wife Francesca, the estate is a champion of the rare Nebbiolo Rosé clone, which contributes to the wines' delicate and complex character. The winemaking is staunchly traditional, with foot-crushing for gentle extraction, long fermentations, extended maceration, and aging in large, neutral oak barrels. They use only natural yeasts for fermentation.
