A small estate parcel planted in 1992 on a combination of mostly clay, but with some limestone, chalk, and sand outcroppings. Manual harvest followed by de-stemming, traditional fermentation in stainless steel tanks, and maceration for about ten days. Finished wine remains in large, neutral barrel for 18-24 months, then an additional 12 months in bottle prior to release.
Cascina Baricchi is a small, traditional, family-owned winery located in the Piedmont region of Italy, known for crafting elegant, age-worthy Barbaresco. Led by Natale Simonetta and his wife Francesca, the estate is a champion of the rare Nebbiolo Rosé clone, which contributes to the wines' delicate and complex character. The winemaking is staunchly traditional, with foot-crushing for gentle extraction, long fermentations, extended maceration, and aging in large, neutral oak barrels. They use only natural yeasts for fermentation.
