This Jura red wine comes from the Cartaux-Bougaud estate, representing a traditional and low-intervention approach to pinot noir. The fruit is hand-harvested from small plots grown on complex clay and limestone marl soils. Spontaneous fermentation relies entirely on native vineyard yeasts in neutral tanks, avoiding modern extraction techniques or additions. The wine undergoes a natural aging process in used barrels to allow the structural components to settle naturally without wood dominance.

It displays a medium-to-dark ruby color, opening with clear aromatics of wild raspberry, sour cherry, and red plum over a savory background. On the palate, the medium-bodied frame is juicy and structured, balancing crunchy fruit with a fine-grained tannin grip. Subtle notes of wild spice and woodsmoke add a savory depth across the fluid mouthfeel. A central beam of central acidity cuts right through the volume, keeping the palate refreshed. It finishes clean and dry, leaving a savory trace.

Since the family's first harvest in 1973, they have grown into a 20-hectare estate, now run by Sébastien Cartaux and his wife, Sandrine. The winery is known for its traditional and organic winemaking, showcasing the unique character of the Jura region. The Cartaux-Bougaud tradition started with Anne-Marie Bougaud and Guy Cartaux, who committed to winemaking in the 1980s and acquired the historic Château de Quintigny. The second generation took over in 1993, modernizing the business while upholding tradition. The estate was certified organic in 2022, following decades of practicing sustainable viticulture.
