Grape: Pinot Noir, Chardonnay, Pinot Blanc
Vintage: NV
Type: Sparkling

This multi-vintage natural Champagne is crafted by Charles Dufour from organically managed plots in Celles-sur-Ource. The blend combines pinot noir, chardonnay, and pinot blanc, with sixty-five percent harvest fruit barrel-fermented without sulfites. This component integrates with twenty-five percent solera reserve wines and ten percent older family library stocks. Bottled without filtration and disgorged Extra Brut, this cuvée offers a layered grower identity.

It pours a pale gold color with a fine, energetic stream of bubbles, opening with clean aromas of green apple, fresh pear, lemon oil, and white flowers. On the palate, the vinous frame balances floral freshness with a tense, mineral-driven line of chalky acidity. Crunchy flavors of citrus pith and white cherry wrap around a texturally rich mid-palate structure. Notes of toasted brioche and hazelnut add depth without introducing heavy volume. It finishes clean, bone-dry, and persistent, leaving a lingering mineral trace.

Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
