Crafted by natural winemaker Charles Dufour in the Côte des Bar, this grower Champagne reflects a low-intervention approach to sparkling wine. The blend incorporates pinot noir, chardonnay, and pinot blanc, harvested primarily from a single base year with added reserve components. Primary fermentation occurs spontaneously with native wild yeasts in neutral French oak barrels, avoiding synthetic cellar corrections. It undergoes traditional secondary fermentation and extended cellar aging before being disgorged as a Brut Nature with zero dosage.
It pours a pale gold color with a fine, energetic stream of bubbles, opening with aromatics of baked apple, pear, and lemon zest. On the palate, the vinous frame balances orchard fruit flavors with a sharp, vertical line of chalky acidity. Notes of fresh brioche, toasted almonds, and white pepper add a savory depth to the textured mouthfeel. A bracing wave of maritime salinity runs through mid-palate, keeping the profile light.
Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
