Bulles de Comptoir #12 *“Caché dans l'Évidence”* by Charles Dufour is an expressive and lively Champagne that captures the essence of the Côte des Bar. The nose opens with enticing aromas of ripe orchard fruits—baked apple, pear, and quince—interwoven with delicate floral notes and a touch of citrus zest. On the palate, a vibrant acidity and fine, persistent mousse complement its layered complexity, revealing hints of brioche, toasted almonds, and subtle spice. A mineral-driven finish, with a whisper of salinity, adds depth and elegance, making this cuvée both compelling and dangerously drinkable.

Charles Dufour is a highly respected grower-producer of natural Champagne in the Côte des Bar region of southern Champagne, France. Taking over from his family in 2010, Charles quickly adopted organic and biodynamic farming practices, which are challenging in the region's climate. He is known for crafting authentic, terroir-driven Champagnes with a minimalist approach in the cellar. Dufour uses only native yeasts for fermentation, performs long lees aging, and adds minimal to no sulfur. The wines are unfined and unfiltered, expressing the purity of the fruit and terroir.
