Sourced from dry-farmed, high-altitude plots in Valdejalón, this fresh white field blend comes from old vines grown in slate and iron-rich clay soils. Master of Wine Fernando Mora hand-harvests the co-planted white varieties to preserve their bright natural acidity, fermenting the fruit naturally with native yeasts in temperature-controlled concrete vats. The winemaking emphasizes short skin contact and gentle pressing to yield a supple, fluid structure, followed by aging in neutral concrete tanks to maintain raw aromatic purity. Bottled unfined and unfiltered with minimal sulfur, this is an energetic, easy-drinking expression of high-elevation Spanish white crafted for immediate drinkability.

A pale yellow-gold color in the glass leads into lift-driven aromas of green apple, white peach, crushed citrus peel, and wild blossoms. The palate is light, supple, and fluid, featuring bright flavors of tart pear, lemon curd, raw almond, and dried Mediterranean herbs. Soft phenolic texture and a vibrant line of natural acidity keep the mouthfeel crisp, crunchy, and effortless.
