This dry white wine is a pure varietal expression of the roussanne grape from a single vineyard plot planted on sandy marls. The hand-picked grapes are pressed slowly and undergo a spontaneous native fermentation driven entirely by wild vineyard yeasts inside neutral foudres. The winemaking team monitors a zero-makeup cellar process, avoiding modern temperature styling or chemical corrections. The wine matures for twelve months on its fine fermentation lees in old wood casks without filtration or any added sulfur.

It displays a bright yellow-gold color, releasing clean aromas of white peach, apricot, honeysuckle, and wet limestone. A sleek, medium-bodied frame balances orchard fruit flavors with an underlying waxy, rich texture from the lees contact. A lively wave of natural acidity cuts through the volume, maintaining great freshness. Subtle notes of raw almond and a distinct salinity add depth across the clean framework. It concludes bone-dry, leaving a lingering, persistent finish.
