Presented in a magnum format for slow development, this grower Champagne is a single-vineyard bottling from the Les Alouettes parcel. Christophe Baron isolates this plot on the hillsides of the Marne Valley, cultivating only pinot meunier on diverse clay soils studied by soil scientists. The winemaking involves a spontaneous primary fermentation using native vineyard yeasts, avoiding commercial sugar additions. It undergoes extended lees contact before being disgorged as a Brut Nature with zero dosage.
It displays a bright gold-straw color with a fine, persistent mousse, opening with aromas of salted melon, fresh citrus, and wet stone. On the palate, the vinous frame balances a juicy core of fruit with a complex, savory depth from the lees. A sharp wave of natural acidity cuts right through the textured mouthfeel, keeping the profile fresh. Notes of hazelnut and deep salinity develop nicely as the wine breathes.
Christophe Baron is a visionary French vigneron known for his pioneering work in creating exceptional, terroir-driven wines in both Washington's Walla Walla Valley and his native Champagne region. His approach combines respect for the land with minimal intervention winemaking, resulting in highly sought-after, expressive, and age-worthy wines. Returning to his family roots, he produces site-specific, single-vintage, zero-dosage Champagnes from very old, estate-owned Pinot Meunier vines in the Marne Valley. In the cellar, Baron relies on natural fermentation with native yeasts and uses little to no new oak. The goal is to allow the character of the vineyard to shine through without masking it.
