This orange wine is a micro-production zibibbo cuvée of only three-hundred bottles fermented in a single amphora. Named after Gabrio Bini's wife, it comes from a special plot of zibibbo vines on the volcanic island of Pantelleria. The hand-harvested grapes ferment spontaneously with native wild yeasts inside a buried terracotta vessel. Maturing extended months on its skins, it is bottled unfiltered and without added sulfur to showcase a rare island identity.
It pours a hazy gold color, releasing intense aromatics of candied orange peel, fresh apricot, and lemongrass. On the palate, a medium-to-full-bodied frame pairs stone fruit flavors with a distinct, tea-like tannin structure from the skin contact. A gentle phenolic grip frames the mid-palate cleanly, balanced by a sharp beam of mineral acidity from volcanic soils. Subtle notes of raw hazelnut and white flowers add depth across the textured mouthfeel. It finishes completely bone-dry, leaving a lingering saline trace.
Azienda Agricola Serragghia, located on the volcanic island of Pantelleria between Sicily and Tunisia, is the project of former Milanese architect Gabrio Bini and his son Giotto. Founded in the 1990s, the estate is renowned for its uncompromising commitment to natural winemaking, utilizing biodynamic farming practices and a non-interventionist cellar approach that completely avoids added sulfur. The vineyards are situated in the high-elevation Serragghia district, where old bush vines are tended by hand and horse on mineral-rich volcanic soils featuring obsidian and clay. Their signature production method involves spontaneous fermentation and long macerations in terracotta amphorae that are buried in the vineyard's tuff soil, a technique Gabrio refined after studying Georgian traditions and receiving guidance from icons like Pierre Overnoy. The estate is most famous for its Serragghia Bianco, a dry and aromatic Zibibbo, and Fanino, a unique co-fermented blend of red Pignatello and white Catarratto grapes that results in a light, energetic red or deep rosé. Beyond these local varieties, the Binis also produce limited amounts of Pinot Noir, Syrah, and Carignan, all defined by a wild, saline character and the distinctive arrow-shaped logo found on their labels.
