This low-intervention red wine is a pure varietal expression of pinot nero grown on the volcanic terraces of Pantelleria. Gabrio and Giotto Bini adopt a hands-off cellar mindset, letting native vineyard wild yeasts drive the fermentation process. The hand-picked grapes undergo a gentle maceration inside terracotta amphorae buried directly in the vineyard soil. Bottled unfiltered and with zero added sulfur, this cuvée defines a rare Mediterranean volcanic identity.

It displays a translucent ruby hue, releasing a rustic bouquet of wild strawberries, red carrots, and field flowers. On the palate, the light-to-medium body feels energetic and fluid, balancing red fruit energy with a distinct mineral line. Fine-grained, soft tannins provide a gentle grip across the fluid mouthfeel without aggressive extraction. A clean wave of mountain acidity cuts through the texture, maintaining great freshness. It finishes bone-dry, leaving a light trail of volcanic spice.

Azienda Agricola Serragghia, located on the volcanic island of Pantelleria between Sicily and Tunisia, is the project of former Milanese architect Gabrio Bini and his son Giotto. Founded in the 1990s, the estate is renowned for its uncompromising commitment to natural winemaking, utilizing biodynamic farming practices and a non-interventionist cellar approach that completely avoids added sulfur. The vineyards are situated in the high-elevation Serragghia district, where old bush vines are tended by hand and horse on mineral-rich volcanic soils featuring obsidian and clay. Their signature production method involves spontaneous fermentation and long macerations in terracotta amphorae that are buried in the vineyard's tuff soil, a technique Gabrio refined after studying Georgian traditions and receiving guidance from icons like Pierre Overnoy. The estate is most famous for its Serragghia Bianco, a dry and aromatic Zibibbo, and Fanino, a unique co-fermented blend of red Pignatello and white Catarratto grapes that results in a light, energetic red or deep rosé. Beyond these local varieties, the Binis also produce limited amounts of Pinot Noir, Syrah, and Carignan, all defined by a wild, saline character and the distinctive arrow-shaped logo found on their labels.
