This Jura white wine is produced by natural winemaking icons Anne and Jean-François Ganevat using négoce fruit from trusted local growers. The cuvée blends sixty percent chardonnay and forty percent savagnin, harvested from a single parcel of Bajocian limestone vines planted in 1986. Fermentation occurs spontaneously with indigenous wild yeasts in neutral wooden vessels, bypassing modern commercial adjustments. It matures on its fine fermentation lees for twenty-four months in large oak foudres to encourage texturally driven development without wood dominance.

It pours a pale straw-gold color, opening with intense aromatics of bruised apple, lemon curd, smoky reduction, and crushed limestone. The palate is medium-bodied and concentrated, balancing a slightly waxy mouthfeel with an electric, high-toned alpine acidity. Savory flavors of preserved citrus, green olive, and hazelnut drive across mid-palate volume. The limestone geology imparts a chalky texture that frames the long, dry finish.

After consecutive vintages of losing large portions of his harvest, Jean-François was forced to innovate to make more wine. In partnership with his sister Anne, he went to friends in Alsace, Beaujolais, and Savoie to source more fruit. Anne and Jean-François even went so far as to purchase vines in the Beaujolais. Each Vin de France cuvée is a blend of estate fruit from the Jura and purchased (or estate) fruit from another region, thus allowing Jean-François to apply his savoir-faire in winemaking with indigenous grape varieties from the Jura to create a new and unique line of wines. All of the vineyards contributing to this project are farmed organically.
