Sourced primarily from the Eola-Amity Hills, this white wine utilizes a traditional Burgundy-inspired approach known as the black Chardonnay method. The grapes undergo a heavy pressing that oxidizes the juice before native fermentation, building natural phenolic stability and savory reduction. The wine ages in neutral French oak barrels to let the structural components settle naturally without wood interference. This zero-makeup process results in a texturally driven bottling that highlights the volcanic soils of the Willamette Valley.

It opens with intense aromas of flinty mineral, citrus rind, and smoky reduction. The palate is concentrated and fresh, delivering flavors of green apple and tangy lemon zest. A medium-bodied, creamy texture is balanced by an electric, salty acidity that cuts through the mid-palate. Subtle notes of fresh bread dough and crushed stone add savory depth. It finishes completely dry, leaving a clean, persistent impression.

Chris Hermann is a unique figure in the wine world. He is equally at ease in the boardroom advising major wineries and vineyards and in the cellar crafting ultra-premium wines. He co-founded 00 Wines in 2015 alongside his wife Kathryn and his late father Dr. Richard Hermann in Oregon’s Willamette Valley, creating a project that fuses family heritage, ecological insight and winemaking ambition.
