Domaine JeanDaugeGrape: Colombard
Vintage: 2022
Type: White
This low-intervention white wine is a pure varietal bottling of colombard produced under a strict zero-input protocol. The hand-harvested grapes undergo a slow, five-week fermentation driven entirely by native wild yeasts inside neutral concrete tanks. The winemaking prioritizes raw varietal expression, aging the liquid on its noble lees for one month prior to final blending. Bypassing modern physical manipulation, the wine is bottled entirely unfined, unfiltered, and with zero added sulfur to protect its natural structure.
It pours a pale straw-yellow color, opening with clean aromatics of green apple, fresh lime, and white flowers. A light-to-medium-bodied frame balances crisp orchard fruit flavors with an underlying stony mineral core. A lively, electric acidity runs through the center of the wine, providing excellent structural tension. The brief lees contact contributes a subtle texture that cushions the lean framework without adding heavy weight. It finishes completely dry, leaving a clean, mouthwatering trace.
Winery
Sébastien Fezas took over his family’s farm at Jeandaugé in Courrensan, in the Gers, at the end of 2012. After several years of transition, he released the first bottled vintage in 2017. The vineyard includes six white and two red grape varieties on predominantly clay-limestone soils. His approach has gradually brought fallow land, hedges, animals and trees back into the farm, treating the vines as part of a wider agricultural system rather than an isolated crop.
The soils are no longer worked mechanically; cover crops, grazing and preparations made on the property are used to nourish and protect them. Farming follows organic and biodynamic principles without claiming certification. Around half the vineyard supplies the estate’s own cuvées, while other grapes go to fellow producers in the Southwest. The wines are made without additives or added sulfites, ranging from still reds and whites to orange wines and pét-nats. Traditional cask-strength Armagnacs complete a project whose identity comes from the whole farm and Sébastien’s patient rethinking of its practices.
