The hand-harvested albariño grapes are fermented in stainless steel tanks using only indigenous wild yeasts to maintain varietal purity. Winemaking involves several months of aging on the fine fermentation lees in tank, avoiding oak barrels or chemical adjustments. This low-intervention process focuses on capturing the natural texture and high acidity generated by the nearby ocean winds.

It pours a bright straw color, opening with intense aromatics of white peach, fresh apricot, and white flowers. A silky, full-bodied frame balances ripe stone fruit flavors with a sharp, citrus-driven freshness. A bracing wave of maritime salinity runs through the center, keeping the texture clean and lively. Benito Santos is an historically significant and pioneering winery in the Rías Baixas D.O. of Galicia, Spain, dedicated to producing authentic, terroir-driven Albariño. The founder, Benito Santos, was instrumental in establishing the Rías Baixas Denominación de Origen in the 1980s, building on a legacy of making prize-winning wines for his bar since the 1930s.
