This sweet white wine is a traditional straw wine blend of savagnin, chardonnay, and a small portion of poulsard from biodynamic Arbois vineyards. The hand-harvested grapes are left to dehydrate on straw mats for four months, concentrating the sugars and acids. The fruit is pressed early and ferments slowly with native wild yeasts in neutral wood casks, reaching a light eight percent alcohol. The resulting passito style retains three-hundred grams of residual sugar balanced by high acidity.

It pours a deep gold-amber color, releasing rich aromatics of baked apple, quince paste, wildflower honey, and dried orange peel. On the palate, the full-bodied frame is unctuous and sweet, yet it carries this weight effortlessly due to a sharp line of natural acidity. Complex flavors of orange marmalade and almond coat the mouth in a silky texture. A clean mineral undercurrent grounds the high sugar concentration, keeping the profile fresh.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
