This varietal red wine is sourced from several select plots of old trousseau vines grown on red marl soils in Arbois. Stéphane and Bénédicte Tissot farm the plots biodynamically to cultivate fruit with high natural acidity and fine phenolics. The hand-picked grapes are natively fermented using wild yeasts, incorporating a small whole-cluster component for structural complexity. The wine ages in neutral French oak barrels to let the components integrate without wood manipulation.
It displays a translucent, pale ruby color, releasing a perfumed nose of wild strawberry, blood orange, and earthy spice. On the palate, the light-bodied frame is racy and energetic, pairing tart red fruit flavors with crunchy, green undertones. Polished, fine-grained tannins provide a smooth structural grip across the mid-palate. A clean thread of alpine acidity runs through the center, keeping the fluid mouthfeel refreshed. It finishes bone-dry, leaving a light peppery trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
