The Domaine Tissot "Patchwork" 2023 Chardonnay reveals a wine with a bright and clean profile, offering lively notes of citrus, orchard fruits, and a chalky, saline minerality. The palate is defined by its freshness, medium body, and a crisp, energetic acidity that gives the wine excellent length and a flinty, reductive character. As its name suggests, "Patchwork" is a blend of Chardonnay from different plots with a mix of clay and limestone soils. The vinification is a natural, hands-off approach. Grapes from old vines (up to 60 years old) are hand-harvested and fermented with native yeasts. The wine is aged for approximately 12 months in French oak barrels, with a small percentage of new wood. The barrels are topped up (ouillé) to prevent oxidation, allowing the wine to showcase a pure, fruit-driven, and mineral style, a hallmark of Tissot's "ouillé" Chardonnays.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
