The **Domaine Tissot "Les Bruyères" 2022 Chardonnay** is an expressive and mineral-driven wine from the Jura region. The tasting profile reveals a complex bouquet of ripe stone fruit, green apple, and citrus, framed by a distinct flinty, smoky, and chalky minerality. On the palate, the wine is concentrated and powerful, with a creamy texture balanced by vibrant, saline acidity. The finish is long and persistent, leaving notes of dried fruit and toasted nuts. The wine's character is a direct result of its meticulous vinification. The grapes, sourced from old vines (up to 80 years old) on a south-facing slope of clay and blue marl, are hand-harvested and undergo spontaneous fermentation with indigenous yeasts. The wine is then aged for approximately 24 months in French oak barrels, with a small percentage of new oak (around 20%), on its fine lees. This "ouillé" method, where the barrels are topped up regularly, prevents oxidation and allows the wine to develop a fresh, pure, and terroir-expressive character. The use of biodynamic farming further contributes to the wine's authenticity and depth.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
