This white wine is crafted from chardonnay rose, a rare pink-skinned mutation selected through massal selection in Arbois vineyards. Stéphane and Bénédicte Tissot cultivate these biodynamic plots on complex limestone and clay soils. The hand-harvested fruit ferments naturally with indigenous wild yeasts in topped-up neutral oak casks. This low-intervention process captures the natural energy and phenolic texture of the pink berries to deliver an authentic regional identity.
It pours a pale straw hue with faint copper reflections, releasing aromas of yellow orchard fruit, acacia blossoms, and toasted hazelnuts. The palate is dry and medium-bodied, balancing a refined mouthfeel with a bright, taut acidity. Flavors of fresh pear, lemon zest, and white peach blend smoothly across the mid-palate. A distinct element of crushed chalk and salt salinity runs underneath, providing excellent structural tension. It finishes long and dry, leaving a clean mineral trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
