Timothee Stroebel has walked the path of many of his peers, coming from a Champagne house already in production. In 2001, after many years of studying in the vineyards and cellars of Burgundy and Champagne, Thimotée Stroebel returned to her own vines to fulfill a dream once considered utopian. Thanks to the trust placed in him by the family, the vineyard owner was able to create his own entity, with a single purpose: to consolidate and develop the family property in accordance with his convictions. In fact, in 2003 the use of herbicides was interrupted and the land returned to work manually, in 2009 the management of the vineyard is carried out only and exclusively according to the principles of organic agriculture which is officially certified in 2014.

In the cellar, the production of wines follows the same philosophy as the vineyards, it is the wines that dictate their own rhythm and the role of the winemaker is only to accompany them. Indigenous yeasts are used for alcoholic fermentations and vinification takes place either in barrels (even if the notes of wood are not sought after) or in stainless steel cuvée as needed. Sulfur is used to a minimum. Malolactic fermentation begins with spring heating. The base wine ages on the lees before being bottled only when it is ready at the end of spring or summer. In order not to remove anything from the bases, filtrations or stabilizations are not carried out.

Timothée’s family came from Alsace and settled in Champagne after the Second World War. Vineyards were planted in the early 60’s in Villers Allerand, a small 1er cru village tucked in Montagne de Reims, where they still farm today.

Two generations later, Timothée had the dream to produce his own Champagne from the plots planted by his grandfather. After studying wine in Beaune and working in Burgundy, Timothée slowly got back the plots that were divided between the family members. 

Installation was done in steps: 2001 the vineyards; 2005 the first wines were produced. The domain encompasses the three known Champagne varieties: Pinot Meunier, Pinot Noir and Chardonnay. 

From the vintage 2018, all the wines are barrel aged, and he is working towards bigger size barrels starting from 400L. The alcoholic and malolactic fermentation happens naturally, wines are not cold stabilized and there is no dosage nor filtration.
