This sparkling botanical beverage is the flagship blend crafted by the low-intervention producers at Muri in Copenhagen. The liquid is constructed from a selection of gooseberries, white currant wine, quince, jasmine tea, and a fermented geranium and woodruff kvass base. The separate components are fermented naturally using wild cultures and native yeasts to capture layers of structural depth. The final assembly skips traditional alcohol extraction methods, focusing entirely on raw flavor complexity and natural carbonation.

It pours a clear straw color with an energetic, fine mousse, releasing a heady nose of flowers, honey, and ripe orchard fruits. On the palate, the light-bodied frame is refreshingly dry and linear, showcasing an ethereal line of crisp acidity. Multiple dimensions of flavors unfold across the palate, balanced by a subtle vinous funkiness. The jasmine tea contact provides a smooth structural cushion that rounds out the mouthfeel nicely. It finishes clean, crisp, and uplifting.

Muri is a Copenhagen-based non-alcoholic fermentation house that borrows as much from wine, cider, kombucha and gastronomy as from the drinks industry. Founded by Murray Paterson, the project creates complex, wine-adjacent beverages from ferments of fruits, teas, herbs, grains and botanicals, often layering different bases the way a winemaker might blend parcels. Muri is not trying to imitate a single grape variety. Instead, it builds drinks around acidity, tannin, aroma and texture, making bottles that can sit naturally at the table with food and satisfy the same curiosity as low-intervention wine.
