This unfortified white wine is crafted from old palomino fino vines grown within the La Platera vieja parcel of Pago de Miraflores. The biodynamic fruit is picked early in mid-August to lock in a low sugar concentration and crisp natural acidity. Spontaneous fermentation relies entirely on native wild yeasts inside used two-hundred-and-twenty-five liter French oak barrels. The liquid then matures on its full fermentation lees inside neutral tanks for eleven months prior to final bottling.

Presenting as a pale, lightly cloudy straw hue, it opens with delicate aromas of dried flowers, wild herbs, and spice. A light-to-medium-bodied frame pairs a vibrant entry with a precise, clean, and detailed mouthfeel. The full lees contact coordinates smoothly with a chiseled core of stony, sappy minerality driven by the soil. A crisp wave of natural acidity cuts through the texture, keeping the lower-alcohol profile fresh. It concludes with a long, dry finish.

Muchada-Leclapart is the meeting of Marco Antonio Muchada's Andalusian roots and David Leclapart's Champagne sensibility. Based in Sanlucar de Barrameda, the project works old Palomino vines on albariza soils, farming biodynamically and seeking still white wines that express the chalk, Atlantic wind and light of Jerez country without fortification. The cellar work is deliberately simple: native fermentations, no heavy oak, long lees contact and very low additions. These wines helped redefine what Palomino could be outside the Sherry category, showing salinity, texture and luminous restraint rather than oxidative power.
