This unfortified white wine is sourced from the La Platera vieja parcel, a small plot within the historic Pago de Miraflores. A collaborative biodynamic project between Alejandro Muchada and David Léclapart, the palomino fino vines average over sixty-five years of age. The hand-picked grapes undergo a spontaneous native fermentation driven by wild yeasts inside well-seasoned Bordeaux barrels, completely avoiding flor or fortification. It settles in wood without absorbing heavy oak flavors or forced cellar spices.
It displays a pale golden hue, releasing an open nose of quince, decayed white flowers, white pepper, and sea breeze. A medium-bodied frame is perfectly round and balanced, showcasing an elegant fluidity and a dry, chalky texture. Savory layers of faint spices and a touch of clove develop beautifully as the mouthfeel expands. A clean thread of natural acidity runs through the center, keeping the harmonious profile fresh. It finishes long, dry, and extremely tasty.
Muchada-Leclapart is the meeting of Marco Antonio Muchada's Andalusian roots and David Leclapart's Champagne sensibility. Based in Sanlucar de Barrameda, the project works old Palomino vines on albariza soils, farming biodynamically and seeking still white wines that express the chalk, Atlantic wind and light of Jerez country without fortification. The cellar work is deliberately simple: native fermentations, no heavy oak, long lees contact and very low additions. These wines helped redefine what Palomino could be outside the Sherry category, showing salinity, texture and luminous restraint rather than oxidative power.
