This dry sparkling white wine represents a traditional col fondo bottling made using the ancestral method in Veneto. The Mongarda estate farms the steep limestone hillsides organically, utilizing a field blend composed of glera and verdiso grapes. Primary fermentation occurs spontaneously with native wild yeasts inside concrete tanks, bypassing modern chemical corrections. The secondary fermentation takes place naturally inside the bottle using a reserve of the wine’s own fresh must, maturing un-disgorged on its noble yeasts.

It pours a lightly cloudy straw-yellow color due to the natural presence of fermentation lees. The nose opens with bright aromas of lemon zest, green apple, pear, and warm toasted bread. On the palate, a linear, extremely refreshing mousse delivers crisp orchard fruit flavors balanced by a sharp line of acidity. The col fondo texture provides a savory, mineral-laced depth across the mid-palate volume. It concludes bone-dry, leaving a persistent trace of stone.

Mongarda is an acclaimed, family-run winery located in Col San Martino, at the heart of the Conegliano Valdobbiadene Prosecco Superiore DOCG zone in Italy's Veneto region. Founded in 1978 by Bruno Tormena and now run by his son Martino, the estate is dedicated to producing "terroir-driven" Prosecco with a profound respect for its unique, steep, hillside vineyards.

The winery's philosophy is rooted in artisanal, low-intervention practices, which include hand-harvesting from old vines—some dating back to the 1950s—planted on poor, rocky, calcareous soils that impart great sapidity to the final wines. In addition to the primary Glera grape, Mongarda meticulously preserves and co-ferments ancient local varieties like Perera, Verdiso, Bianchetta, and Boschera. Winemaking is non-formulaic, utilizing spontaneous primary fermentation with indigenous yeasts and minimal intervention. Mongarda produces a range of high-quality sparkling wines, including DOCG-designated Brut and Extra Dry, as well as the traditional, unsulphured, refermented-in-bottle *Col Fondo* style.
