This dry white wine is a pure varietal bottling of Listán Blanco produced by the Envínate team in the Valle de la Orotava. Sourced from century-old cordón trenzado vines grown on volcanic basalt soils in Tenerife, the vineyard benefits from cool ocean winds. The hand-harvested grapes are pressed directly into large neutral oak tuns for a spontaneous fermentation driven by native wild yeasts. It matures on its fine fermentation lees without any added sulfur or filtration.

It displays a pale straw hue, releasing a complex nose of preserved lemon, green orchard fruit, and a distinct smoky reduction. A medium-bodied frame balances a slightly textured waxy mouthfeel with a sharp line of volcanic acidity. Savory flavors of green apple and grapefruit zest interweave with a strong vein of marine salinity. The neutral wood contact provides a structural cushion that frames mid-palate cleanly. It finishes bone-dry and persistent, leaving a mouthwatering trace.

Envínate is a collective of four friends who create highly sought-after, terroir-driven wines from distinct, Atlantic-influenced regions across Spain. The name, which translates to "wine yourself," reflects their minimal intervention philosophy, using old-fashioned farming and winemaking methods to allow each parcel to express its character. Founded in 2005 by friends Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez, the group initially started as a winemaking consultancy before evolving into its own label. Envínate's methods involve working with organic and biodynamic principles in the vineyard, followed by fermentation with native yeasts and aging in old oak or concrete. They avoid fining, filtering, and use minimal to no sulfur.
