This low-intervention dry rosé is a vibrant blend of grenache and merlot from the Empordà region of Catalonia. Winemakers Dido and Jurriaan handle the hand-picked fruit with a hands-off approach, utilizing native yeasts for a completely spontaneous fermentation. The juice matures on its fine fermentation lees inside neutral tanks, completely bypassing filtration, fining, or heavy wood barrel components. The wine is bottled with zero added sulfites to maintain a youthfully focused fruit profile and a slight natural fizz.

It pours a deep copper-pink hue, releasing playful aromatics of candied red fruits, sweet cherries, watermelon, and strawberries and cream. A light-bodied frame is juicy and approachable, delivery an easy-drinking texture at a moderate alcohol level. A sharp wave of natural acidity cuts right through the fruit sweetness, keeping the fluid mouthfeel thoroughly refreshed. The light effervescence frames the mid-palate cleanly, adding a delightful lift. It concludes clean, dry, and highly refreshing.

Dido & Jurriaan Morsink, a couple who moved from Amsterdam are making great wines which start in the vineyard. Vines are farmed organically, without synthetic chemicals or pesticides. Instead, we work with nature. Nurturing living soils and planting cover crops to maintain balance. This biodiversity keeps the land healthy and allows the vines to express their full potential.
