This natural white wine is a multi-vintage expression of Sauvignon Blanc crafted by low-intervention vigneron Nicolas Renard. The fruit is hand-harvested from organically managed plots and vinified following strict zero-input protocols in the cellar. Primary fermentation relies entirely on native wild yeasts inside seasoned French oak barrels, completely avoiding modern temperature control or chemical additions. The liquid matures for a prolonged period on its fine fermentation lees to encourage natural structural depth prior to bottling.

It pours a pale straw color, releasing clean aromatics of lemon flesh, yellow peach, and wild mountain herbs. On the palate, a sleek, medium-bodied frame balances orchard fruit flavors with an underlying chiseled mineral core. A racy vein of natural acidity cuts through the slightly waxy mouthfeel, maintaining excellent structural tension. Subtle layers of maritime salinity add depth across the textured center without introducing heavy wood tones. It finishes completely bone-dry, leaving a persistent trace.

Nicolas Renard is a Jura-trained, low-intervention vigneron whose small production has made him something of an insider name. After working with influential natural-wine figures in the region, Renard developed his own wines from carefully sourced fruit, often emphasizing native yeasts, long elevage and little to no sulfur. His bottles can include Jura varieties and nearby French appellations, always with an eye toward tension, savory depth and unforced expression. The wines are not about polish or volume; they are about texture, mineral snap and the kind of quiet cellar work that lets fragile aromatic detail survive.
