This low-intervention white wine is a pure varietal bottling of sauvignon blanc crafted by Mathias and Camille Marquet. Part of their Hors Les Murs négoce line, the fruit is sourced from an organic partner grower whose vineyards share the estate's strict biodynamic viticulture principles. Spontaneous fermentation relies entirely on native vineyard wild yeasts inside temperature-controlled stainless steel vats, avoiding modern chemical corrections. It settles naturally on its fine lees to protect regional freshness and crisp varietal precision.

It pours a pale straw color with green highlights, opening with fresh aromas of white peach, citrus zest, and tropical starfruit. A sleek, medium-bodied frame balances crisp orchard fruit flavors with an underlying stony mineral undercurrent. A zesty wave of natural acidity slices directly through the waxy texture, providing excellent structural tension. Delicate floral notes and a light salinity add a savory depth across the clean mouthfeel. It finishes completely dry and crisp.
