This natural sparkling white wine is crafted by Athénaïs de Béru from young chardonnay vines planted near Chichée in Burgundy. The plot is situated on a high limestone plateau, where cool mountain winds help retain high natural acidity. Winemaking follows low-intervention protocols, featuring native yeast primary fermentation followed by secondary bottle fermentation using traditional methods. Matured on fine lees in neutral containers, it preserves a pure, high-altitude mineral identity.

It pours a pale straw color with silver reflections and a fine, persistent stream of bubbles. The nose opens with aromas of green apple skin, citrus rind, and fresh bread dough. A soft, rounded, and texturally complex mouthfeel delivers crisp fruit flavors alongside a vein of mineral salinity. A sharp wave of natural acidity cuts through the linear volume, keeping the texture clean. It finishes dry and refreshed, leaving a lingering, mouthwatering trace of chalk.
