Distinctive apple-skin aroma. Top marks for standing out from the crowd. Just slightly frothy but admirably fruity for a zero-dosage wine. Long. Really quite impressive. Especially for such a low level of alcohol. A field blend of 47% Chardonnay, 31% Pinot Noir, 14% Pinot Meunier and 8% Pinot Gris. Spontaneous ferment, unfiltered biodynamic wine. Wiltshire produce of the ex co-founder of Clos Perdus. This was the first vintage incorporating about 10% of wine vinified in amphora, the rest being in 5/6-fill burgundy barrels. The grapes were pressed in a Coquard basket press, previous vintages were pressed in a conventional horizontal press. Most was co-fermented, with the exception of some of the Chardonnay which was picked later. No added sulphur or dosage or yeast. /p>

 

Domaine Hugo is an English wine producer known for its small-scale, artisanal sparkling wines. The estate is a collaboration between biodynamic viticulturist Hugo Stewart and winemaker Daniel Ham of Offbeat Wines. Following extensive experience with biodynamic farming in France, Hugo Stewart returned to his family farm to establish the winery in 2015. The vineyard is fully organic and biodynamic, focusing on creating a healthy ecosystem by using practices such as natural cover crops and allowing sheep to graze. The winery has earned a strong reputation for quality. It is the only English member of the prestigious biodynamic association Renaissance des Appellations.
