Francois Rousset-Martin Perle du Village Cotes du Jura Savagnin 2018
Francois Rousset-MartinGrape: Savagnin
Vintage: 2018
Type: White
Sourced from old-vine savagnin parcels situated near the village of Nevy-sur-Seille, this topped-up or ouillé cuvée highlights François Rousset-Martin's focused, site-specific approach in the Jura. The hand-harvested fruit ferments spontaneously with native yeasts in neutral wooden casks, where it undergoes an extended aging period on its fine lees with regular topping up to avoid oxidative flor formation. Bottled unfined and unfiltered with minimal sulfur, the winemaking focuses on raw varietal purity and structural tension. This is an elegant, highly tactile expression of Côtes du Jura savagnin that balances generous fruit with chiseled mineral drive.
It shows a deep straw-gold hue and opens with fragrant aromas of lemon peel, yellow pear, crushed almond, and wet limestone. The palate is rich and concentrated, delivering flavors of preserved citrus, white peach, and wild herbs, framed by a silky, leesy weight on the mid-palate. Electric natural acidity cuts straight through the texture, giving the liquid a clean, linear focus from start to finish. It concludes on a long, mouthwatering finish defined by a burst of grapefruit pith and persistent sea salt.
Winery
François Rousset-Martin is a benchmark producer of high-precision Jura winemaking based in Nevy-sur-Seille, situated directly below the iconic cliffside of Château-Chalon. Armed with a background in microbiology and oenology, Rousset-Martin returned to his family's roots in 2007 to take over their multi-generational vineyard plots. He organically farms roughly 10 hectares of parcel-selected vines planted on steep, fossil-rich slopes of blue, gray, and yellow marl. His focus centers on single-vineyard expressions of savagnin and chardonnay, alongside small plantings of poulsard, pinot noir, and trousseau.
In the cellar, Rousset-Martin is recognized for his non-traditional work with savagnin, crafting topped-up (ouillé) expressions from prime Château-Chalon sites. Because official appellation rules dictate that Château-Chalon must be aged oxidatively under a veil of flor (sous voile), he willingly declassifies these non-oxidative, site-driven cuvées to Côtes du Jura. Fermentations take place spontaneously with native yeasts in neutral Burgundian barrels, where the wines mature undisturbed on fine lees without racking. Bottled without fining, filtration, or added sulfur, his cuvées deliver laser-like mineral tension, high natural acidity, and a deep, saline expression of local marl soils.
