Grape: Savagnin
Vintage: 2019
Type: White

Sourced from the steep, limestone-rich "Sous-Roche" parcel in Château-Chalon, this topped-up or ouillé savagnin is crafted by François Rousset-Martin from old vines grown on gray marl. The fruit ferments spontaneously with native yeasts in neutral oak barrels, then undergoes long maturation on fine lees with regular topping up to prevent oxidative flor development. Bottled with minimal sulfur and without fining or filtration, the winemaking isolates the intense mineral tension of this specific slope. This is a focused, chiseled expression of Côtes du Jura savagnin that balances raw power with electric acidity.

It presents a deep straw-gold color, opening with intense aromas of preserved lemon, green apple, crushed walnut, and damp slate. The palate delivers driving flavors of yellow plum, white pepper, and salted citrus oil, supported by a dense, textural weight from the long leesy contact. High, electric acidity cuts directly through the wine's rich mid-palate, giving it outstanding vertical drive and balance. It finishes long, dry, and intensely saline, leaving a lasting impression of crushed limestone and grapefruit pith.

Winery

François Rousset-Martin is a benchmark producer of high-precision Jura winemaking based in Nevy-sur-Seille, situated directly below the iconic cliffside of Château-Chalon. Armed with a background in microbiology and oenology, Rousset-Martin returned to his family's roots in 2007 to take over their multi-generational vineyard plots. He organically farms roughly 10 hectares of parcel-selected vines planted on steep, fossil-rich slopes of blue, gray, and yellow marl. His focus centers on single-vineyard expressions of savagnin and chardonnay, alongside small plantings of poulsard, pinot noir, and trousseau.

In the cellar, Rousset-Martin is recognized for his non-traditional work with savagnin, crafting topped-up (ouillé) expressions from prime Château-Chalon sites. Because official appellation rules dictate that Château-Chalon must be aged oxidatively under a veil of flor (sous voile), he willingly declassifies these non-oxidative, site-driven cuvées to Côtes du Jura. Fermentations take place spontaneously with native yeasts in neutral Burgundian barrels, where the wines mature undisturbed on fine lees without racking. Bottled without fining, filtration, or added sulfur, his cuvées deliver laser-like mineral tension, high natural acidity, and a deep, saline expression of local marl soils.
