Hailing from the historic village of Óis do Bairro in the heart of Bairrada, this biodynamic bottling focuses on oceanic limestone terroir. Winemaker Filipa Pato utilizes old, hand-harvested bical vines rooted deeply in rare chalky slopes that capture the cooling Atlantic breeze. The whole clusters are slowly pressed and spontaneously fermented with wild yeasts inside neutral five-hundred-liter Portuguese wood casks. Raised for eight months on its fine lees without bâtonnage, this white skips sweet fruitiness for structural tension.

It shows a pale straw color with silver glints, opening with delicate aromas of green pear, fresh wild fennel, and struck flint. A crystalline core of laser-sharp salinity cuts directly across an unexpectedly nutty, broad mid-palate. The texture feels beautifully expansive yet agile, anchored by a light sensation of chalky fruit-skin grip. Subtle notes of white peach skin develop nicely as the liquid opens up. It finishes bone-dry, leaving a stone-tinged trail.
