Produced by the legendary French winemaker Stéphane Tissot, this 100% Chardonnay comes from an estate that has been a pioneer of the Biodynamic movement since 2004. The "BBF" designation refers to Blanc de Blancs en Fût, indicating it was fermented and aged in neutral oak barrels to add texture without masking the fruit. With an extended 24-month Lees Aging process, this wine offers a sophisticated, toasty, and deeply mineral experience with a saline finish that rivals the finest Champagne.

Expect to encounter bright citrus notes, like lemon and grapefruit.. The wine's extended lees aging contributes to a delicate brioche and toasty character, adding depth and complexity. A pronounced minerality, characteristic of Jura wines, provides a crisp and clean finish, balanced by a lively acidity. 

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
