 This ethereal wine is a partnership between Australian Christian Knott and French Morgane Seuillot. Christian, formerly the cellarmaster at the legendary Domaine Chandon de Briailles, and Morgane, whose family has farmed in the region for centuries, run this tiny, cult estate. Pinot de Zinc is a blend from their three other reds. When they rack off those cuvées, which are made to be crystal clear (despite being unfiltered), a little extra always stays behind in the barrels. That leftover goodness gets blended and left rest on full lees for another six months. Racked off again and voilà! As such, the texture here is tighter, more compact, but still ethereal and spiced. This is such an engaging wine with rusticity and that signature Dandelion charm.

They farm Strictly Biodynamically, famously using a Horse named Quid to Plow the rows to protect the delicate soil structure from heavy machinery. Their philosophy extends to the cellar, where they use ancient wooden presses and avoid all additives. This is Zero-Zero winemaking—no additives, no filtration, and no sulfur—resulting in a vibrant, rare, and incredibly honest expression of Burgundy that tastes of wild raspberries and forest floor.
