This low-intervention red wine is a site- bottling of Listán Negro from the northern district of Lanzarote. Sourced from the La Rosa de los Negrines vineyard, the ungrafted old vines grow directly in shallow soils over a solid bedrock of volcanic stone. Winemaker Pablo Matallana utilizes low-intervention protocols, allowing the hand-harvested fruit to undergo a spontaneous fermentation driven by native wild yeasts. It ages in a combination of stainless steel vats and neutral oak casks to maintain a fresh regional profile.

It displays a bright, ruby hue, releasing expressive aromas of sour cherry, wild strawberry skin, and white peppercorn. On the palate, the light-bodied frame is fresh and energetic, balancing primary red fruit with a chiseled, volcanic minerality. Soft, fine-grained tannins integrate with a clean wave of coastal acidity that keeps the mouthfeel light. Notes of dried herbs and flint develop as the fluid core expands.

Pablo Matallana is one of the most thoughtful young voices in the Canary Islands. Based on Tenerife and trained through both enology and serious field work, he has become known for recovering old vineyards and working with traditional varieties such as Listan Negro, Listan Blanco and Vijariego. His parcels often sit on volcanic soils in dramatic, wind-shaped landscapes, where farming is laborious and yields are naturally modest. In the cellar he favors native yeasts, gentle extraction and minimal additions. The wines are light on their feet but full of volcanic imprint, combining smoke, herbs, salt and bright Atlantic freshness.
