This volcanic white wine is a pure varietal expression of Malvasía Volcánica grown in the dramatic landscape of Lanzarote. Winemaker Pablo Matallana manages the old vines manually, cultivating plants rooted deep in pits dug into black volcanic ash and protected by stone walls. The grapes undergo a spontaneous native fermentation driven by wild yeasts in stainless steel tanks and neutral oak casks, avoiding modern adjustments. The liquid matures on its fine fermentation lees for several months to encourage natural structural density and maritime salinity.
It displays a bright straw color with silver highlights, releasing expressive aromas of lime zest, green pear, jasmine, and cold flint. A medium-bodied frame pairs crisp orchard fruit flavors with an underlying smoky mineral spine. A driving wave of coastal acidity runs through the textured mouthfeel, keeping the profile fresh and. The short lees contact contributes a waxy cushion that balances the bone-dry entry perfectly.
Pablo Matallana is one of the most thoughtful young voices in the Canary Islands. Based on Tenerife and trained through both enology and serious field work, he has become known for recovering old vineyards and working with traditional varieties such as Listan Negro, Listan Blanco and Vijariego. His parcels often sit on volcanic soils in dramatic, wind-shaped landscapes, where farming is laborious and yields are naturally modest. In the cellar he favors native yeasts, gentle extraction and minimal additions. The wines are light on their feet but full of volcanic imprint, combining smoke, herbs, salt and bright Atlantic freshness.
