This dry white wine comes from a specific single vineyard planted at high altitude in the Penedès region of Spain. Enric Soler manages the ancient plot under strict biodynamic farming protocols to protect the natural acidity of the indigenous Xarel-lo grape. The hand-harvested fruit undergoes a gentle pressing followed by a spontaneous fermentation driven by native wild yeasts in neutral French oak barrels. It undergoes a natural aging regimen on its fine lees to build natural structural harmony.
It pours a pale straw-yellow color, releasing clean aromas of green apple, lemon flesh, and white flowers over a background of stone. A sleek, medium-bodied frame balances orchard fruit flavors with an underlying chiseled mineral core. A lively wave of natural acidity cuts through the textured mouthfeel, maintaining great freshness. The neutral wood contact provides a structural cushion that rounds out the palate nicely. It finishes dry, leaving a lingering saline trace.
