This skin-contact orange wine is crafted by Eduardo Torres Acosta from old vines grown on the volcanic slopes of Mount Etna. Sourced from parcel selections characterized by dark, sandy basalt soils, the vineyard includes small co-planted native white varieties. The hand-harvested fruit undergoes an extended skin maceration inside neutral concrete vats, relying on native wild yeasts for spontaneous fermentation. It matures on its fine fermentation lees in old wooden barrels and is bottled entirely unfiltered.
It pours a hazy amber-gold color, releasing distinctive aromas of dried apricot, citrus rind, and fresh potting soil. A medium-bodied, texturally driven frame pairs stone fruit flavors with a distinct, tea-like tannin structure. A gentle phenolic grip frames mid-palate cleanly, balanced by a sharp beam of mineral acidity from the volcanic soils. Subtle notes of raw hazelnut and wild thyme add depth across the textured mouthfeel. It finishes completely bone-dry, leaving a long saline trace.
Eduardo Torres Acosta is an acclaimed young winemaker from the Canary Islands, known for his fresh, elegant, and mineral-driven natural wines produced on the volcanic slopes of Mount Etna in Sicily. After growing up and working on his family's vineyards in Tenerife, Eduardo moved to Sicily in 2012. There, he honed his skills with apprenticeships under renowned producers Arianna Occhipinti and at the Passopisciaro winery. His approach is rooted in organic farming and non-interventionist winemaking. He focuses on restoring old, traditionally mixed-planted vineyards on Etna and allowing the unique volcanic soils to define the character of the wines.
