This dealcoholized white beverage is a pure varietal expression of the verdejo grape sourced from sustainably managed Spanish vineyards. The winemaking team monitors a low-intervention primary fermentation with native wild yeasts inside stainless steel tanks, avoiding heavy cellar corrections. Following maturation, the liquid undergoes a highly precise vacuum dealcoholization process to extract the alcohol while preserving the raw organic elements. This modern process focuses entirely on maintaining true varietal precision, natural acidity, and structural stability before bottling.
It pours a clear straw color, opening with an impressive, fruity-tropical bouquet that delivers a lively and light experience. A wonderful explosion of flavors is harmoniously rounded off by delicate herbal nuances. The mouthfeel shows an exciting contrast between the balanced sweetness of the fruits and a clean mineral baseline. Kolonne Null is a Berlin-based project focused on alcohol-free wine that treats dealcoholization as a serious craft rather than a lifestyle afterthought.
