This dealcoholized pink beverage is a traditional southern blend combining grenache, syrah, carignan, and cinsault grapes sourced from selected French vineyards. The 2023 growing season was characterized by high rainfall during the maturation period, which led to lower grape density on the vines. The production process involves a gentle primary fermentation with native wild yeasts followed by a specialized low-temperature vacuum distillation to remove the alcohol. This method focuses on capturing the original varietal aromatics and structures without synthetic additives.
It retains a pale salmon-pink hue, releasing a mild taste profile with fine nuances of yellow fruit and a delicate hint of strawberry. On the palate, the light-bodied frame is refreshing and smooth, delivering the typical French character of a traditional rosé. A gentle wave of natural acidity coordinates nicely with an elegant mineral baseline across the tongue. The texture remains light on its feet, avoiding heavy or sugary profiles.
Kolonne Null is a Berlin-based project focused on alcohol-free wine that treats dealcoholization as a serious craft rather than a lifestyle afterthought.
